C'est L'Halloween!

We had the privilege of having the Missionaries serving in our ward, over for dinner last night. Every year I want Halloween to be more fun than the last and although I really wanted to throw a party, this came just as close. I made a frightful dinner and a creepy dessert and we all had a great time.

On the menu:


Monster Mash Potatoes
(Roasted Garlic Mashed Potatoes)


Dracula's Heart
(Cranberry Pork Roast)

Recipes:


Cranberry Pork Roast

3-4 lbs Pork Shoulder or Butt Roast
1 bag Cranberries
1 cup Honey
1/8 Tsp. Ground Nutmeg
1/8 Tsp. Ground Cloves
1/8 Tsp. Ground Ginger
Zest of 1 med Orange
Put Pork Roast in a crock pot. Mix next 6 ingredients in a food processor or blender. Pour cranberry mixture on top of pork roast. Cook on Low 8 hours. Serves 6-8 people


Roasted Garlic Mashed Potatoes

8-10 Russet Potatoes, washed and scrubbed
6-8 Bulbs of Roasted Garlic (instructions will follow)
1/2 cup Butter
1/4-1/2 cup of Heavy Cream or Half & Half
Cut potatoes (with skin on) into small quarters. Cook in salted water for 15-20 min or are tender when poked with a fork. Drain.
Add butter, cream & roasted garlic. Whip or mash until no visible lumps can be found. Add salt and pepper to taste.

How to roast garlic:

Start by removing as much skin of the bulb as you can without removing each individual clove. Cut the tops off the garlic bulbs about an 1/8 or 1/4 in. Place each bulb on a piece of foil and pour a tsp of olive oil on the top. Wrap up the bulb in the foil and place on a foil lined cookie sheet.
Place in a preheated 400°F oven for 45 min. Turn oven down to 350°F and leave garlic in there for another 30-45 min. Remove from oven and let cool for about 15-20 minutes. Unwrap from foil. To remove roasted garlic, use a fork or simply squish it out.
